Cream Cheese Chocolate Chip Rockies

Ingredients:

110g unsalted butter, softened

150g caster sugar

120g Yester Farm Dairies Luxury Soft (or Reduced Fat) Cream Cheese, softened

1 large egg

320g self raising flour

2tsp cornflour

Pinch salt

120g chocolate of choice, chopped

Splash of milk if needed

Method:

  • Cream together butter, sugar and cream cheese in a large bowl until light and fluffy.

  • Beat in the egg.

  • Add flour, cornflour and salt, whizz until smooth. If the dough is a little stiff, add a splash of milk to soften slightly.

  • Stir in the chocolate chips.

  • Pop bowl into the fridge for a couple of hours to firm up.

  • Line baking trays with parchment and, using an ice cream scoop, plop onto the trays , spaced about 2 inches apart (they have a habit of spreading, so don’t crowd the trays). Press down with the back of a damp fork.

  • Bake in a preheated oven, 180C/Fan 160C/Gas5 for about 10 - 12 minutes.

  • Cool on the trays for 5 minutes and then transfer to cooling rack.

  • Excellent with a cuppa, a glass of cold milk or sandwiched with your favourite ice cream!

    Tips:

  • Ring the changes by adding a tablespoon of cocoa powder (remove the same amount of flour) for double choc chip, or for triple – drizzle white chocolate over the cooled cookies.

  • Try adding nuts, dried fruit instead of chocolate.

  • For a citrus flavour, add zest of a lemon and juice; for an orangey twist, add zest and juice of ½ an orange. A handful of blue berries add a fruity burst.

  • Spice them up with cinnamon; works really well with the orange.

  • Add chopped stem ginger, replace half the caster sugar with dark muscovado sugar; when cooled dip in melted dark chocolate.
